Leftover Turkey Grilled Cheese
There’s a million and one different ways to make a leftover turkey sandwich, but here’s what I deem to be the tastiest way. Here’s what you’ll need:
- Bread – use any kind of bread you’ve got on hand. Small/medium slices work great.
- Butter – to toast the sandwich. Can sub this for Mayo if you wanted.
- Leftover Turkey – sliced/shaved or diced, doesn’t make a difference!
- Cranberry Sauce – this obviously pairs beautifully with turkey. There’s usually leftovers alongside the turkey too!
- Bacon – turkey and bacon is such an underrated combo.
- Brie – adds a nice creaminess to balance out the salty bacon and sweet/tart cranberry sauce.
I recommend getting the turkey out the fridge 10 or so mins before needed, just to take the chill off of it to ensure it heats right through in the sandwich.
What cut of turkey to use?
Any cut will work, just preferably not the skin (skin is best when it’s crispy and it’ll go soggy in the centre of the sandwich). I usually go for breast, because that’s typically what’s leftover, but the dark meat will work too.
Process: add bread butter side down to pan (photo 1), add cranberry sauce (photo 2), add turkey (photo 3), add bacon (photo 4), add brie (photo 5), add bread butter side up and toast both sides (photo 6).
Leftover Turkey Sandwich FAQ
How long does leftover turkey last?
It’ll be fine for around 3 days tightly stored in the fridge. Just ensure it’s hot right through once you’ve toasted the sandwich, and don’t reheat it more than once.
Can I use leftover chicken instead?
Yep! I’ve made this sandwich with leftover rotisserie chicken and it works just as well.
Can I use a different cheese?
I find the mellow creaminess of brie works perfectly, however you could experiment if you wanted! I imagine Provolone and Swiss would both work nicely.
Serving a Leftover Turkey Sandwich
This is awesome as it is, but if you’re up for a bit of cooking the day after Christmas or Thanksgiving you could always whip up some Parmesan Fries or Spicy Wedges!

How to make a Leftover Turkey Sandwich (Full Recipe & Video)
Leftover Turkey Grilled Cheese Sandwich
Equipment
- Baking Tray/Pan (for cooking bacon)
- Sharp Knife & Chopping Board (for dicing turkey/brie)
- Non-Stick Pan
- Spatula/Turner
Ingredients
- 8 small/medium slices of Bread
- 10oz / 300g Leftover Turkey, sliced (or as needed)
- 8 slices of Bacon, cooked to preference
- 1x 9oz/250g block of Brie, sliced into strips
- 4 tbsp Cranberry Sauce
- Butter, as needed
Instructions
- Spread one side of each of the slices of bread with butter. Flip half of them so they're butter-side-down and spread with cranberry sauce. Top with turkey, then bacon, then brie. Add the other slice of bread on top butter-side-up.
- Add to a non-stick pan (2 at a time) over medium heat and fry both sides until golden, with the brie starting to leak out.
- Slice in half and enjoy!
