Here I’ll show you the easiest and most delicious way to whip up a Berry Fruit Salad!
There’s a million and one ways to make a fruit salad, but no way more simple and delicious than using berries and only berries. I don’t know about you but berries are always the star of the show in a fruit salad for me, so why not celebrate the berry in all it’s glory?!
Fruit Salad Dressing
For me there’s always gotta be some sort of juice or dressing with a fruit salad. Don’t get me wrong, a bowl of fresh good quality fruit is glorious, but that little pool of juice left at the bottom of the bowl? You can’t beat it! Whilst this dressing is well suited for berries, it’ll work for any kind of fruit salad. Here’s what you’ll need:
- Cranberry Juice – Cranberries are too tart to put in the salad itself, so it’s nice to still have the flavour in juice form. You could sub other juices with similar flavours like blueberry, pomegranate or raspberry juice.
- Lime – This livens up the salad with a slight hit of acidity.
- Honey – This not only mellows out the tartness of the cranberry juice and acidity of the lime juice, but also enhances the natural sweetness in the berries.
Berry Fruit Salad
When it comes to what berries to choose, typically I use what I have access to:
- Strawberries
- Blackberries
- Blueberries
- Rasperries
What other fruits could I add to this?
I’ve personally added pomegranate, cherries and watermelon, which all go beautifully. But go wild! Have a play around with your favourite fruits or whatever you have on hand.
Fruit salad with Mint
One final ingredient I like to add to this is fresh mint. Not too much, but just a little really takes things to the next level. It really livens up the flavours and compliments to the berries so beautifully. Careful though, a little goes a long way. Some recipes suggest up to 1/4 cup, but I recommend starting off with a tsp or two.
Process shots: add fruit and mint to a mixing bowl (photo 1), pour over dressing and stir to combine (photo 2).
Serving a Berry Fruit Salad
I know this isn’t a classic Sandwich Side, but sometimes it’s nice to whip up for a tasty snack after your sandwich. Or, it goes great with Sweet Sandwiches like Peanut Butter Nutella Sandwiches and Ice Cream Cookie Sandwiches!
What can I serve with this?
I typically serve it as is it, but sometimes (like today) I’ll dollop over some Clotted Cream or Greek Yogurt!
Can I make this ahead of time?
It’s good for a couple of hours, but the fruit will begin to break down fairly fast. It’ll still taste great, but the texture won’t be quite as firm and there will be a much bigger pool of juice at the bottom of the bowl the longer it rests.
Alrighty, let’s tuck into the full recipe for this berry fruit salad shall we?!
