Pesto Mayo is the twist on mayonnaise you never knew you needed. With just 3 ingredients it truly couldn’t be easier to make!

Pesto Mayo

I know it does seem like an odd concept at first, but I promise you it actually works. Let’s take a quick look at the star ingredients here:

  • Pesto – Highly recommend homemade pesto of course. Failing that store bought will work just fine, just try and find a good quality brand. I have tried this with different varieties of pesto and I find basil pesto works the best.
  • Mayonnaise – Again, homemade mayo for the win. I recommend a full fat mayo for a fuller flavour.

The secret ingredient!

Alongside the pesto and mayo you’ll need lemon juice. The lemon juice cuts through the richness of the sauce and adds a gentle, but vibrant kick of flavour. Fresh lemon juice works best here, stay clear of any bottled stuff or it’ll throw off the flavour.

How to store pesto mayo?

Tightly cover or place in a tightly sealed jar and pop in the fridge.

How long does pesto mayo keep?

If kept tightly covered in the fridge I usually keep it for 4-5days. The lemon juice helps prevent oxidisation, just be vigilant after 3-4days and use your judgement.

How to use pesto mayo?

Works great as a sauce in sandwiches and burgers, but also great as a dip (perfect for Sweet Potato Wedges or Bacon Wrapped Sweet Potato Wedges). It’s also of course great slathered in a sandwich, my favourites being Chorizo Sandwich and Antipasto Sandwich!

Pesto Mayo

Equipment

  • Small/Medium Pot
  • Teaspoon (for stirring)
  • Sharp Knife & Chopping Board (for lemon)

Ingredients

  • 3/4 cup / 180g Mayo
  • 2 - 3 tbsp Pesto
  • 1/2 Lemon, juice only (or to taste)

Instructions

  • In a small bowl combine mayo with pesto. Gently squeeze in the juice of half a lemon (or to taste) and stir to combine. Serve in burgers and sandwiches or use as a dip!

Notes

a) Mayo - I recommend a full fat mayo, just for a fuller flavour. Try and use a good quality brand as it does make up the bulk of the sauce.
b) Pesto - Of course recommend homemade pesto, but if you're getting store bought same as above, just try and get a get quality brand.
c) How to store - Tightly cover and store in the fridge. I find this lasts a lot longer than regular pesto and usually keep it for 4-5 days before it begins to discolour. The lemon juice also helps prevent it from oxidising. Just use your discretion though past 3-4days.
d) Calories - based on using 2.5 tbsp pesto and sharing between 6 people:
