Notes

a) Croissants/Serving - Depending on the size of your croissants and how much filling you like, you'll get 4-5 sandwiches. 6 at a stretch if you prefer minimal filling and have smaller croissants.
b) Croissants for a crowd - Grab some 'mini croissants' and serve these sandwiches up for a crowd! In the UK Tescos/Waitrose do packs of 12 mini croissants which work perfectly.
c) Can I make this chicken salad ahead of time? - This is totally dependent on how long you had the cooked chicken for. For chicken cooked on the day of making this, the chicken salad should be good for 2-3days tightly covered in the fridge.
d) Can I cook up fresh chicken for this recipe? - Yep! You'll want two large chicken breasts (approx 14oz/400g), season and fry both sides to get a nice colour, then fill up with water or chicken stock, pop a lid on and allow to simmer until cooked right through. Depending on the size of breasts this could take between 8-12mins. Pop in a bowl and dice into cubes.
