1/2Lemon,juice only (can sub 1 tbsp apple cider vinegar)
1tspDijon Mustard
Salt & Pepper,to taste
Instructions
In a small mixing bowl combine mayo, yogurt, lemon juice, mustard and a pinch of salt and pepper (to taste).
In a larger mixing bowl add chicken, celery, cranberries, bacon, red onion and nuts. Pour in the dressing and combine until all the filling is coated in the dressing.
Slice open croissants and add chicken salad. Fold back over then tuck right in!

a) Croissants/Serving - Depending on the size of your croissants and how much filling you like, you'll get 4-5 sandwiches. 6 at a stretch if you prefer minimal filling and have smaller croissants. b) Croissants for a crowd - Grab some 'mini croissants' and serve these sandwiches up for a crowd! In the UK Tescos/Waitrose do packs of 12 mini croissants which work perfectly.c) Can I make this chicken salad ahead of time? - This is totally dependent on how long you had the cooked chicken for. For chicken cooked on the day of making this, the chicken salad should be good for 2-3days tightly covered in the fridge.d) Can I cook up fresh chicken for this recipe? - Yep! You'll want two large chicken breasts (approx 14oz/400g), season and fry both sides to get a nice colour, then fill up with water or chicken stock, pop a lid on and allow to simmer until cooked right through. Depending on the size of breasts this could take between 8-12mins. Pop in a bowl and dice into cubes. Or, you can roast up a whole chicken!e) Calories - based on using 4 large croissants.
