Simply Delicious Salami Sandwiches

Here I’ll show you how to make these simple and outrageously tasty salami sandwiches!

Toasted Ciabatta

For the bread, I love using ciabatta. It crisps up so beautifully. Plus ciabatta tends to be slightly smaller than other loaves, so you end up with cute little sarnies!

Because the slices end up on the smaller side, I tend to make a few of these sandwiches at a time; and because of that, I prefer toasting the bread under the grill. That way you can do multiple at the same time.

Can I toast the bread in a pan instead?

You sure can! In fact, if I’m only doing 1 or 2 sandwiches this is my preferred method. The bread comes out crisp but still a little soft in the centre, whereas it can sometimes dry out a little in the oven. However, it’s obviously more hands-on and time-consuming, unless you have a very large pan.

Do I have to toast the bread?

Strictly speaking, no. But it’s nice to have a textural contrast to the soft fillings.

Rocket Salad

Alongside the salami, I love adding some rocket/arugula to the sandwich. You could whack the rocket straight in the sandwich, but I love dressing it in a simple mix of extra virgin olive oil, balsamic vinegar, honey and s&p. Just to bring it to life and add a touch of moisture to the sandwich.

Salami Sandwich

Alrighty, for the whole sandwich here’s what you’ll need:

  • Bread – As discussed.
  • Pesto Mayo – Literally basil pesto and mayo mixed together (here’s my version). This adds a touch of flavour and helps prevent a dry sandwich. You could alternatively use just mayonnaise or pesto.
  • Rocket – As discussed.
  • Salami – I recommend folding it in to give the sandwich some height.
  • Provolone – Goes beautifully in this sandwich! I typically shave it with a vegetable peeler, but you could just add it sliced.

Which salami is best for a sandwich?

I typically use Finocchiona Salami, but Genoa is another popular choice. In all honesty though any good quality variety of salami will do the trick.

What could I sub the Provolone for?

I know this can be tricky to find here in the UK. I usually pick it up from my local Italian Grocer, but realise not everyone has access to that (plus it’s pricey!). My favourite subs are Gouda or Mozzarella, although they are much creamier and not as sharp as Provolone.

Serving Salami Sandwiches

I typically make these 4-5 at a time to feed a group for lunch. If you’re looking for a Side Dish, I recommend some Marinated Olives. Or if you want to make it more of a meal go for some Garlic Parmesan Fries!

Equipment

  • Large Baking Tray or Frying Pan (for toasting bread)
  • Small Pot & Brush (for coating bread)
  • Medium Sized Mixing Bowl & Whisk (for rocket salad)
  • Bread Knife

Ingredients

Sandwich

  • 10 fairly thin slices of Ciabatta (see notes)
  • 20 slices Salami (approx 4oz/120g total)
  • 5oz / 150g Provolone, sliced or shaved with a vegetable peeler (see notes)
  • 2-3 tbsp Extra Virgin Olive Oil
  • 5 tsp Pesto Mayo (see notes)

Rocket

  • 2oz / 60g Rocket/Arugula
  • 2 tbsp Extra Virgin Olive Oil
  • 1 tbsp Balsamic Vinegar
  • 1/2 tsp Honey
  • Salt & Pepper, to taste

Instructions

  • Add ciabatta slices to a large baking tray and brush with oil. Pop under the grill and broil until lightly golden, then flip, brush with more oil and broil again until lightly golden on the other side.
  • Meanwhile, in a medium-sized mixing bowl whisk together 2 tbsp extra virgin olive oil, 1 tbsp balsamic vinegar, 1/2 tsp honey and a pinch of salt & pepper to taste. Add rocket and toss to coat.
  • Spread half of the toasted ciabatta with a thin layer of mayo. Top with a pinch of the rocket, followed by folded salami. Top with cheese, then add the second slice of ciabatta on top.

Notes

a) Bread - I love ciabatta for these sandwiches, mainly because it crisps up really well. Something firm like Sourdough would also work nicely too. For reference, the 10 slices I used came to 10.5oz/300g total.
b) Toasting the Bread - I'd usually toast the bread in a pan, but since we've got a lot of slices it's easiest to do them all at once under the grill. Having said that, you can still fry the bread in a pan if you'd prefer. The main difference is the bread comes out dryer/slightly crunchier under the grill.
c) Pesto Mayo - You only need a tiny bit of this to add some moisture to the sandwich. It's essentially just mayo mixed with pesto and a squeeze of lemon juice (recipe here). You can alternatively use either mayonnaise or pesto. If you find the oil from the bread and dressing from the rocket enough to prevent a dry sandwich, then you can leave it out altogether if you'd prefer.
d) Provolone - This pairs beautifully with salami, but it can be tricky to find here in the UK.
