Turkey Avocado Sandwich

If you thought a turkey sandwich was boring, think again. This avocado turkey sandwich is simply delicious!!

Equipment

  • Large Frying Pan & Tongs
  • Sharp Knife & Chopping Board

Ingredients

  • 4 fairly thin slices of Bread
  • 4 slices of Bacon
  • 4 deli-style slices of Turkey (see notes)
  • 2 heaped tbsp Cream Cheese
  • 2 tsp finely diced Fresh Chives
  • 1 medium-large Avocado, halved, pitted, peeled & thinly sliced
  • Chilli Flakes, Flaky Salt and Black Pepper, to season avocado
  • Butter or Olive Oil, as needed (to toast bread if bacon fat drys up)

Instructions

  • Add bacon to a large pan over medium heat. Fry until crisp with the fat rendered, then remove from the pan, leaving the fat behind.
  • Turn up the heat to a medium and toast both sides of the bread in the leftover fat. If you can only fit two slices at a time, just do two batches. If the bacon fat drys up, just add a knob of butter or a drizzle of oil.
  • Top two of the slices with cream cheese, followed by chives, followed by the bacon. Fold in the turkey, then top with sliced avocado. Season to taste with chilli flakes, salt and pepper, then pop the other slice of fried bread on top.
  • Slice in half and enjoy!

Notes

a) Turkey - I typically use the round slices you pick up from the deli/cooked meat section at the shops. It folds in nicely and doesn't dry out the sandwich too much. You can also use leftover roast turkey if you have it on hand.
b) Bacon - This is a killer addition to the sandwich. It not only provides the goods for frying the bread, but it also pairs beautifully with both avocado and turkey. It also adds a nice crisp texture to break up the other soft fillings. If for whatever reason you can't use bacon, the sandwich will still be great, but definitely add it if you can!
c) Additions - I sometimes add sliced tomato, usually to add moisture if I'm adding leftover turkey that's a touch dry. I also sometimes sub a small amount of very finely diced red onion if I've not got any chives on hand. This sandwich also works perfectly with chicken instead of turkey!
d) Calories - Per sandwich assuming 2 tsp extra virgin olive oil.
