1 - 2Baby/Little Gem Lettuce,pluck the leaves off and wash off dirt/slice stem if necessary

Instructions
In a small pot combine mayonnaise with ketchup, Worcestershire sauce and lemon juice. Place to one side.
Pat the prawns dry with paper towels, then add to a small mixing bowl. Stir in around 2/3 of the sauce, or enough to comfortably coat the prawns.
Slice rolls through the centre nearly all the way through. Spread a little leftover sauce on the bottom, then add a little gem lettuce leaf. Top with a few slices of avocado and a pinch of salt. Add 4 prawns on top, then finish with a pinch of cayenne (careful, this is spicy).
Serve up and enjoy!

Notes
a) Bread - I love serving these as mini sandwiches because they're perfect for feeding a crowd. As such, I usually buy some part-baked petit pains and bake until lightly crisp. You'll find them at most supermarkets (I know Waitrose, Sainsbury's and Morrisons do them). Failing that, just get any type of mini baguettes/rolls. Or, buy a large baguette and slice it up. For reference, the petit pains I use are 50g/1.8oz each, and since there's 10 that's 500g/1lb in total weight.b) Prawns - I use jumbo/large prawns because they're nice and juicy. I also buy them ready to eat for the easiest prep. If you're using whole prawns just remove the tail, head and vein. If you're using raw prawns just cook as necessary and then allow to completely cool before mixing with the sauce.c) Make Ahead - I usually make the sauce ahead of time and that's it. I find the longer the prawns sit in the sauce, the more watery it gets. Also, the prawns tend to shrink up a little, due to the acidity in the lemon juice. I also don't make the whole sandwich ahead of time because the lettuce goes soggy and the avocado browns!d) Calories - Per sandwich (10 in total).
