Equipment

  • Non-Stick Pan & Spatula/Turner
  • Bread Knife

Ingredients

  • 8 medium slices of Bread
  • 1x 5oz/150g pack of Boursin (see notes)
  • 1 cup / 100g Mozzarella, shredded (see notes)
  • Butter, as needed

Instructions

  • Butter one side of each of your slices of bread. Spread Boursin over the other side (around 1 tbsp per slice works great) then sprinkle with mozzarella. Add the other slice of bread on top butter-side-up.
  • Add into a non-stick pan over low-medium heat and fry both sides until golden, with the cheese nice and gooey in the centre. You may need to do this in two batches.

Notes

a) Boursin - I recommend bringing this to room temp, just so it's easier to spread. I like using Garlic and Fine Herbs but I imagine other flavours will work just as well!
b) Mozzarella - This gives a bit more texture to the sandwich, without overshadowing the flavour of the Boursin. You can add other cheeses, just be conscious that is compliments the Boursin without diluting its flavour.
c) Serving - This grilled cheese goes PERFECTLY with Tomato Soup!
