Remove the crusts from each slice of bread, then sprinkle cheese over half of the slices.
Place a slice of bread on top of the cheese, then gently push down to contain the cheese. Use a rolling pin to evenly flatten the sandwich. You can tidy up the edges if you wish.
Spread both sides with butter, then slice the sandwich into 6 chips.
Spread out on to a baking tray or two, then pop in the oven at 190C/375F for 15-20mins, or until golden and crispy. I recommend flipping them half way. Just keep an eye on them as all ovens are different. They will crisp up slightly more as they cool.

a) Bread - Important to use thin/medium slices of bread. I have made this recipe with thick slices of bread, and it does work but they're slightly more chewy and slightly less crispy. Make sure it's soft white sandwich bread, leave the fancy/seeded bread for another day!b) Cheese - A nice sharp cheddar works best here, just to add a punch of flavour. The cheese will also leak out slightly and cheddar withstands the heat pretty well and withstands burning.c) Serving - Great with a cooked breakfast to mop up a runny yolk, great with your favourite dip and awesome as Tomato Soup dunkers. You can also make these into Nachos too!d) Calories - based on 1 3/4cup cheese and per 6 chips (1 serving):
