In a small bowl combine mayo with pesto. Gently squeeze in the juice of half a lemon (or to taste) and stir to combine. Serve in burgers and sandwiches or use as a dip!

a) Mayo - I recommend a full fat mayo, just for a fuller flavour. Try and use a good quality brand as it does make up the bulk of the sauce.b) Pesto - Of course recommend homemade pesto, but if you're getting store bought same as above, just try and get a get quality brand.c) How to store - Tightly cover and store in the fridge. I find this lasts a lot longer than regular pesto and usually keep it for 4-5 days before it begins to discolour. The lemon juice also helps prevent it from oxidising. Just use your discretion though past 3-4days.d) Calories - based on using 2.5 tbsp pesto and sharing between 6 people:
