In a small pot combine 1 tbsp mayo with 1 tsp dijon mustard and 1 tsp honey. Place to one side.
In a pan with the heat OFF add two slices of bread. Spread with butter then flip over so they're butter side down. Add a slice of cheddar to each, then top with 2 slices of ham each. I recommend folding the ham just to give the sandwich a bit of height/texture (see video for context).
Drizzle over honey mustard mayo then top with Swiss cheese. Finish with a slice of bread and spread with butter. Turn heat to a medium and fry both sides until golden with the cheese nice and gooey. Remove and repeat with the second two sandwiches. Enjoy!

Notes
a) Ham - You can use any variety of ham you fancy. If you choose the wafer thin kind of ham consider chucking in another slice in each sandwich. You could even used leftover ham from your roast. Peppered ham adds a nice kick of spice if you fancy that too.b) Honey Mustard Mayo - This adds a nice punch of flavour and prevents the sandwich from being too dry. Important to drizzle it in the middle of the sandwich (not spread on the bread) or you run the risk of the sandwich going soggy as it fries.c) What else could I add to this sandwich? - I find it perfect as it is, especially with the sauce. However you could add dill or bread and butter pickles if you want an extra layer of flavour/texture! Tomato would also work nicely.d) Calories - per sandwich with 1 tbsp butter per sandwich:
