Chorizo Sandwich

Equipment

  • Large Baking Tray

Ingredients

  • 4x 6" Ciabatta Rolls (or similar size)
  • 7oz / 200g Chorizo, sliced
  • 2x 4.5oz/125g balls of Fresh Mozzarella (see notes)
  • 4 tbsp Pesto Mayo (see notes)
  • 4 small Tomatoes, sliced (3-4 slices per sandwich)
  • 4 pinches of Rocket/Arugula

Instructions

  • Slice open ciabatta rolls then add chorizo slices to one side. Top with mozzarella then place on a baking tray.
  • Grill/broil until the mozzarella begins to melt. If the ciabatta side starts to char before the mozzarella melts cover that side with foil.
  • Once cool enough to handle, top mozzarella with tomato slices and finish with a pinch of rocket/arugula. Spread pesto mayo on the ciabatta side, then fold over and enjoy!

Notes

a) Mozzarella - I highly recommend using fresh mozzarella for this sandwich. It tastes delicious no matter how much you toast/melt it, whereas pre-grated packaged mozzarella doesn't have the same great flavours as fresh mozzarella. If you're using fresh mozzarella that comes in a bine consider patting dry if it's overly moist, or it'll make the sandwich soggy.
b) Pesto Mayo - This is the secret weapon in this sandwich and is an absolute must! If you're not keen on mayo you can just add pesto by itself.
