In a medium sized mixing bowl combine chicken with celery, spring onion, bacon, ranch dressing, salt & pepper (to taste) and sour cream if you're adding it.
Butter one side of all your slices of bread. Top 4 of those with a lettuce leaf. Follow with 2 tomatoes and a pinch of salt and pepper (only do this if you're serving right away or it'll draw out excess moisture in the tomatoes and make the sandwich soggy). Top with chicken bacon ranch and finish with buttered bread.
Slice in half and enjoy!

Notes
a) Bacon - I use what we call in the UK 'streaky' bacon (what I'm told is just regular bacon in the US). Can use smoked or unsmoked. In all cases just make sure it completely cools after it's cooked or it'll turn the ranch warm and gloopy.b) Sour Cream - This adds a nice creaminess to the mixture. We're not blessed with fantastic ranch dressing here in the UK and it can often, in my experience, be a little too tangy. So the sour cream tones this down nicely. Completely down to preference though, try it without and add a teeny bit at a time if you're curious.c) Make Ahead - You can make the chicken bacon ranch mix ahead of time, just tightly seal in the fridge until needed. You can make the whole sandwich, but again just make sure you don't season the tomato with salt and leave it to rest otherwise it'll leak out too much moisture. Important to butter both slices of bread - the butter helps create a barrier to keep the bread from going soggy.d) Leftover Chicken - Don't have leftover chicken but still want to make this sandwich?
