In a large pan over medium heat add a splash of olive oil alongside onion, jalapeño and garlic. Fry until they soften, then add in chorizo and continue frying until the chorizo begins to crisp. Remove everything from the pan and rest on paper towels. Wipe out pan.
Spread one side of each of the slices of bread with butter. Flip half over them over so they're butter-side-down. To those slices, add Monterey Jack, followed by chorizo, then sliced avocado and finish with mozzarella. Add bread on top butter-side-up.
In two batches, add sandwiches to the pan over medium heat and fry both sides until golden with the cheese melted in the centre.

Notes
a) Chorizo - I use regular cured Spanish chorizo and just dice it up. You can use raw ground chorizo, you'll just have to obviously fry it longer until it's cooked right through.b) Avocado - This adds a nice creamy flavour to counteract the intense flavours of the chorizo. I highly recommend adding it, but if you don't like or don't have it you can leave it out.c) Jalapeño - I use fresh jalapeños, but you can use pickled jalapeños if that's what you have on hand. A couple of tbsp finely diced should do the trick!d) Cheese - Monterey Jack and Mozzarella are both fairly mild and mellow cheeses, which work great to allow the chorizo to shine through. I find adding something like a sharp cheddar can be a bit much. Having said that though, you can experiment with any cheese you fancy! You can also use shredded Monterey Jack instead of squares. The weight of 8 squares is 7oz/200g, so just use that much.e) Calories - based on 1 tbsp butter per sandwich and 1 tsp olive oil for frying.
