Instructions
Dressing: In a small bowl whisk together cranberry juice, honey and lime juice. Place to one side.
Fruit Salad: In a larger mixing bowl add strawberries, blueberries, blackberries, raspberries and mint. Pour in dressing and mix to combine.
Serve: Serve individual portions with a dollop of yogurt or cream (optional)

a) Quantities - You can adjust the quantities and increase the amount of your favourite berry if you wish. I use 5oz/150g of each because that's typically the size sold in UK supermarkets. Use the serving scale at the top of the recipe card to adjust if you need.b) Serving - This is best serve cold, so if your fruit is room temp consider popping it in the fridge for 15-30mins before serving. I don't recommend making it too far in advance (a couple of hours is fine) as the fruit starts breaking down from the acidity of the lime juice. Don't waste leftovers though, just tightly cover in the fridge (the flavour will be just as good, the fruit will just be softer and there will be a lot more juice at the bottom of the bowl).c) Cranberry Juice - I use cranberry juice, just to keep in line with the berry theme. Feel free to use blueberry or even pomegranate juice! Depending on how sweet the juice is you may not need as much honey (just work to taste).d) Calories - Whole recipe divided by 3 with no yogurt or cream:
